It's not a real, legal holiday season if you don't serve garlic cheese grits. You can serve them at Thanksgiving or Christmas, or both, take yer pick.
2 cups uncooked hominy grits 1 1/2 tsp salt 2 qt boiling water 6 oz grated American cheese 3 garlic cloves, pressed 1/2 cup butter 3 lightly beaten eggs 2 cups milk Grated Parmesan cheese
Cook the grits in boiling salted water until they are tender but still pourable. Remove from the heat; add American cheese, garlic and butter, stirring until the cheese has melted.
When the grits are cool, mix in the eggs and milk; pour into two well-greased two-quart casseroles. Bake in a preheated 325 F. oven for 50 to 60 minutes. Remove from the oven and sprinkle with Parmesan cheese; bake for ten minutes longer and serve immediately.
NOTE: This may be prepared ahead. Refrigerate until ready to bake.
Also known as Harvard beets, where I grew up. Many different recipes, but here's a simple one: One can of sliced beets, drained and rinsed 2 ounces butter, melted 2 ounces honey 2 ounces orange juice 1 tablespoon apple cider vinegar
Melt butter in a small saucepan, then add honey, OJ, and vinegar and stir over medium heat, then add beets and toss to coat each slice thoroughly, heating over medium till beets are heated through.
